English Toffee Crunch Ice Cream

Ingredients

  • 4 sm English Toffee Candy Bars -- (Heath or possibly Score)
  • 2 lrg Large eggs
  • 3/4 c. Sugar
  • 2 c. Heavy Cream -- (or possibly whipping cream)
  • 1 c. Whole Lowfat milk
  • 2 tsp Vanilla

Directions

  1. Using a sharp knife, cut the candy bars into 1/2 inch chunks. You will end up with about 1 c.. Place the minced candy in a bowl, cover and freeze. Beat Large eggs
  2. In a mixing bowl till light and fluffy (1-2 min). Beat in the sugar, a little at a time till completely blended. Pour in the cream, lowfat milk, vanilla, and blend. Transfer the mix to your ice cream maker and freeze, following manufacturer's instructions. After the ice cream stiffens, add in the candy, then continue freezing till the ice cream is ready.
