Emmental Gruyere And Spinach Tart Recipe

  • pastry:
  • 225 gm plain flour
  • 100 gm butter
  • 1 x egg yolk
  • 3 Tbsp. water to mix
  • 350 gm lean bacon pcs minced
  • 1 lrg onion minced
  • 350 gm young fresh spinach shredded or possibly 450g frzn leaf spinach thawed and really well liquid removed
  • 5 x Large eggs and 1 egg white (lust 5 Large eggs if using bought pastry)
  • 300 ml double cream
  • 300 ml lowfat milk
  • 1 x salt and freshly grnd black pepper 175g gruyere or possibly emmental cheese grated

Directions

  1. First make the pastry.
  2. Measure the flour into a bowl and rub in the butter till the mix resembles fine breadcrumbs.
  3. Mix to a dough with the egg yolk and the water all this can be done in a processor. Work together.
  4. Refrigeratefor half an hour or possibly so in the fridge.
  5. Roll the pastry out on a lightly floured surface.
  6. Use to line a large deepish oval flan dish 330 x 250mm or possibly a 280 to 305mm deepish round flan dish.
  7. Flute the top edge.
  8. Refrigeratetill ready to cook.
  9. Put the bacon pcs in a large nonstick frying pan on the simmering plate and allow the fat to run out.
  10. Add in the onion transfer to the boiling plate to brown for a few moments then transfer to the floor of the simmering oven for 15 min or possibly so till the onion is tender.
  11. Return to the boiling plate add in the spinach and stirfry for a couple of min.
  12. Whisk the Large eggs cream lowfat milk and seasoning (go easy on the salt if the bacon is salty).
  13. Scatter the bacon onion and spinach over the base of the pastry case sprinkle over half of the gruyere cheese pour over the egg mix and sprinkle with the remaining cheese.
  14. Cook on the floor of the roasting oven for about 25 to 30 min turning after 15 min till the lusty is pale golden and the filling is just set and golden brown all over.
  15. If the top is becoming too brown slide in the cool plain shelf on the second set of runners.
  16. Dont be tempted to cook for too long as the filling will puff up and overcook.
  17. The greatest joy is which with an aga there is no need to bake the pastry blind first. You can make your own pastry as above or possibly use a bought 500g packet of shortcrust pastry.
