Ingredients

  • 1 1/2 tsp Extra virgin olive oil
  • 1 med Onion, minced
  • 1 x Jalapeno chili, stemmed, minced
  • 2 c. Distilled white vinegar
  • 1 1/2 c. Light corn syrup
  • 1 c. Water
  • 1/2 x Lemon, peel and white pith removed, coarsely minced
  • 2 Tbsp. Prepared white horseradish
  • 1 1/2 Tbsp. Packed minced liquid removed anchovy fillets
  • 2 lrg Garlic cloves, minced
  • 1 tsp Salt
  • 3/4 tsp Grnd black pepper Large healthy pinch of grnd cloves

Directions

  1. Heat oil in heavy large saucepan over medium-high heat. Add in onion and chili; saute/fry till onion is soft, about 3 min. Add in remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer till reduced to 3 C, stirring occasionally, about 40 min. Stir into nonaluminum container. Cover; chill. (Can be made 1 week ahead. Keep chilled.)
