%20%20Instead%20of%20pounding%20the%20chicken,%20I%20filleted%20it.%20%20Using%20a%20sharp%20knife,%20I%20cut%20the%20chicken%20in%20half,%20then%20just%20pounded%20out%20the%20thicker%20parts.%20%20This%20saves%20some%20time%20and%20is%20perfect%20if%20you%20have%20larger%20pieces.%20%20%20I%20also%20had%20some%20pre-sliced%20mushrooms%20in%20the%20fridge,%20not%20my%20favorite%20ones%20to%20use,%20but%20they%20sure%20can%20be%20a%20time%20saver!%3C/p%3E%3Cp%3EAfter%20I%20had%20everything%20prepped,%20I%20put%20some%20flour%20in%20a%20baggie,%20put%20the%20chicken%20breast%20in,%20and%20gave%20them%20a%20good%20shake.%20%20Using%20disposable%20baggies%20can%20be%20a%20real%20timesaver%20for%20clean%20up!%20%20I%20don't%20know%20about%20you,%20but%20when%20I%20dredge%20chicken%20in%20flour%20in%20a%20shallow%20bowl,%20not%20only%20does%20the%20counter%20get%20floured,%20but%20so%20do%20I!%3C/p%3E%3Cp%3EI%20melted%20some%20butter%20in%20my%20skillet%20and%20lightly%20browned%20the%20floured%20chicken%20over%20medium%20heat%20until%20golden%20brown.%20%20It%20takes%20a%20little%20longer%20to%20brown%20the%20chicken%20over%20a%20lower%20heat,%20but%20this%20way,%20I%20do%20not%20take%20the%20chance%20of%20burning%20the%20chicken%20or%20the%20butter.%20%20As%20the%20chicken%20pieces%20browned,%20I%20removed%20them%20to%20my%20casserole,%20layering%20them%20slightly.%20%20Then%20I%20added%20more%20butter%20and%20sauted%20the%20sliced%20mushrooms%20for%20a%20couple%20of%20minutes.%20%20When%20they%20were%20done,%20I%20sprinkled%20them%20around%20the%20chicken.%20%20I%20then%20poured%20in%20a%20little%20of%20the%20Marsala%20and%20deglazed%20the%20pan.%20%20I%20turned%20the%20heat%20up%20slightly%20and%20poured%20in%20the%20remaining%20wine%20and%20the%20hen%20stock,%20bringing%20in%20all%20to%20a%20slow%20boil.%20%20I%20reduced%20the%20heat%20and%20let%20the%20sauce%20simmer%20for%20about%2010%20minutes.%20%20What%20a%20wonderful%20aroma%20it%20is!%3C/p%3E%3Cp%3EPlace%20chicken%20between%202%20sheets%20of%20wax%20paper;%20flatten%20to%201/8%20inch%20thickness%20using%20a%20meat%20mallet%20or%20rolling%20pin.%20Dredge%20chicken%20lightly%20in%20flour.%20Place%204%20pieces%20at%20a%20time%20in%202%20tbsp%20melted%20butter%20in%20a%20large%20skillet;%20cook%20over%20medium%20heat%20for%203%20to%204%20minutes%20on%20each%20side%20or%20until%20chicken%20is%20golden%20brown.%20Places%20chicken%20in%20a%20lightly-greased%2013x9%20inch%20baking%20pan,%20overlapping%20edges.%20Repeat%20procedure%20with%20remaining%20chicken,%20adding%202%20tbsp%20butter.%20Reserve%20drippings.%20Saut%C3%A9%20mushrooms%20in%20remaining%20butter.%20Sprinkle%20evenly%20over%20chicken.%20Stir%20wine%20and%20chicken%20broth%20into%20pan%20drippings%20in%20skillet.%20Simmer%2010%20minutes,%20stirring%20occasionally.%20Spoon%20sauce%20evenly%20over%20the%20chicken.%20Bake%20at%20400%C2%B0%20for%2010%20minutes.%20Combine%20cheeses%20and%20sprinkle%20over%20chicken.%20Bake%20an%20additional%205%20minutes.%3C/p%3E){kind=link}
