Elegant pork roast with sage

This elegant pork sirloin is tender, aromatic and easy to prepare.

Ingredients

  • 1 pork sirloin, 800-1000 g
  • 12-15 very thin slices of bacon (or pancetta)
  • 8-10 thin slices Emmental (Swiss) cheese
  • Fresh sage leaves
  • Pepper

Directions

1. Arrange bacon slices crosswise in the baking pan to cover the sirloin length. Place cheese slices over bacon, sprinkle with pepper and sage leaves.
2. Remove the visible fat from the sirloin, place it on the bacon and cheese. Carefully wrap the sirloin with bacon and cheese
3. Bake in a preheated oven at 180°C for about 10 minutes, turning occasionally. Reduce the temperature to 150°C and bake further 50-60 minutes.
4. When done, let it stand for 10 minutes (so you can cut it more easily and evenly).
