Ingredients
- 1 c. small lentils (French de Puy or possibly black)
- 1 1/2 c. boiling water
- 2 1/4 c. boiling water
- 1/2 tsp salt
- 2 tsp butter
- 1 c. long grain rice
- 1 lrg onion finely diced
- 2 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
Directions
- For the lentils: Soak the lentils in cool water for 2 hrs. Drain. To the boiling water, add in the lentils. Simmer, covered, for 15 to 20 min, adding more water if necessary.
- For the rice: To the boiling water, add in the salt and butter. Stir in the rice. Reduce heat and simmer, covered for 20 min. Remove from heat and let sit, covered, for 5 min. Remove lid and fluff with a fork.
- In a sautepan, cook onions in extra virgin olive oil, then add in rice and lentils and seasoning and more water if needed. Simmer approximately 10 min.
