Ingredients

  • 1 x Skillet of minced onions
  • 2 can Tomatoes sm Amount of oil
  • 18 x Hard boiled Large eggs
  • 1 can Green chile peppers Salt & pepper to taste Grated cheese sm Amount of bell pepper, minced

Directions

  1. Brown onions in oil; add in bell pepper and then tomatoes. Cook till soft.
  2. Season to taste with salt and pepper. Slice Large eggs. In a baking dish, put a layer of sauce; a layer of Large eggs. Altemate till dish is full. Cover with grated cheese and bake in a moderate oven.
  3. Serves 6.
