  • 8 oz. sliced fresh mushrooms, chopped
  • 1/8 t. red pepper flakes
  • 11/2 t. fine sea salt
  • 1/4 t. freshly ground black pepper
  • 1 T. dried shallots
  • 1/8 c. plain Greek yogurt
  • 1 T. Gourmet Garden Italian Herb paste (but you could use any favorite paste from Gourmet Garden like basil or dill)
  • 12 deli slices of Virginia ham
  • 12 large eggs
  • Parmesan cheese, freshly grated
