Ingredients
- 1 Tbs tamarind paste (lemon juice can substitute but tamarind can be found in most supermarkets)
- 1 cinnamon stick
- 1 tsp cumin seeds
- 1 Tbs ground coriander
- 1/2 tsp ground cumin
- 1 tsp salt
- 2 Tbs crumbled jaggery (Indian palm sugar) or dark brown sugar
- 1/2 cup finely chopped fresh cilantro

%20that%20I%20have%20been%20nearly%20at%20a%20loss%20as%20to%20what%20to%20do%20with%20them%20all.%20%20Fortunately%20Indian%20cuisine%20loves%20the%20eggplant%20and%20there%20are%20at%20least%20five%20times%20as%20many%20recipes%20for%20eggplant%20as%20the%20eggplants%20in%20my%20garden,%20and%20that's%20going%20some.%20Every%20day%20when%20we%20take%20our%20lunch%20break%20from%20writing,%20I%20go%20out%20to%20the%20garden%20to%20see%20what's%20up%20and%20I%20usually%20come%20back%20with%20eggplant.%3C/p%3E%3Cp%3ESo,%20I've%20done%20them%20spiced,%20roasted,%20how%20about%20sweet%20and%20sour.%20Whoa,%20you%20only%20thought%20sweet%20and%20sour%20was%20found%20in%20Chinese%20recipes?%20%20Well,%20the%20Indians%20do%20sweet%20and%20sour%20too%20and%20it's%20amazing.%20What%20I%20like%20about%20cooking%20these%20recipes%20is%20that%20they're%20very,%20very,%20quick.%20Once%20the%20eggplant%20has%20been%20rubbed%20with%20salt%20to%20remove%20the%20bitter%20juices,%20it's%20rinsed%20and%20then%20the%20quick%20part.%20It's%20microwaved%20for%204%20minutes%20which%20makes%20it%20soft%20enough%20to%20work%20with%20but%20not%20fully%20cooked.%20Sweet%20and%20Sour%20Eggplant%20is%20fast%20enough%20to%20get%20on%20the%20table%20when%20you%20don't%20want%20to%20mess%20around%20too%20long%20in%20a%20hot%20kitchen%20which%20makes%20it%20a%20great%20end%20of%20Summer,%20early%20Fall%20weather%20dish.%3C/p%3E%3Cp%3ESweet%20and%20Sour%20Eggplant%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3E2%20large%20or%205%20small%20Japanese%20eggplants%3C/p%3E%3Cp%3E1%20onion,%20halved%20and%20thinly%20sliced%3C/p%3E%3Cp%3E1%20shallot%20finely%20chopped%3C/p%3E%3Cp%3E2%20Serrano%20chilies%20finely%20minced,%20seeds%20and%20all.%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EWash%20and%20slice%20the%20eggplants%20on%20the%20diagonal.%3C/p%3E%3Cp%3EPlace%20them%20in%20a%20collender%20and%20sprinkle%20them%20with%20kosher%20salt.%3C/p%3E%3Cp%3ERub%20the%20salt%20into%20the%20eggplant%20slices%20and%20let%20them%20sit%20for%20about%2010%20minutes%20to%20let%20the%20bitter%20juices%20drain%20out.%3C/p%3E%3Cp%3ERinse%20the%20salt%20off%20the%20eggplant%20and%20you%20are%20good%20to%20go.%3C/p%3E%3Cp%3EPlace%20the%20eggplant%20in%20a%20microwave-safe%20bowl%20with%20a%20cover%20and%20cook%20it%20for%204%20minutes.%3C/p%3E%3Cp%3EWhile%20that's%20happening,%20mince%20the%20Serrano%20chilies%20together%20with%20the%20shallot%20and%20set%20them%20aside.%3C/p%3E%3Cp%3EHalve%20the%20onion%20and%20cut%20it%20into%20thin%20slices,%20set%20it%20aside.%3C/p%3E%3Cp%3EHeat%202%20Tbs%20of%20vegetable%20oil,%20(I%20use%20coconut%20oil)%20in%20a%20skillet%20or%20kadhai.%3C/p%3E%3Cp%3EWhen%20the%20oil%20is%20hot,%20toss%20in%20the%20cumin%20seed%20and%20cinnamon%20stick.%3C/p%3E%3Cp%3EAs%20soon%20as%20they%20start%20to%20sizzle,%20add%20the%20onion%20slices.%3C/p%3E%3Cp%3ECook%20the%20onion%20slices%20until%20they%20start%20to%20turn%20golden.%20This%20takes%20about%208%20minutes.%3C/p%3E%3Cp%3EAdd%20in%20the%20Serrano%20chilies%20and%20shallot.%3C/p%3E%3Cp%3EStir%20everything%20around%20well%20and%20saute%20it%20for%20about%2030%20seconds.%3C/p%3E%3Cp%3ETake%20everything%20out%20of%20the%20kadhai%20and%20%20into%20a%20bowl%20and%20set%20it%20aside.%3C/p%3E%3Cp%3EAdd%20the%20cooked%20eggplant%20to%20the%20pan.%3C/p%3E%3Cp%3EStir%20it%20around.%20This%20won't%20take%20long%20because%20you've%20already%20precooked%20it%20in%20the%20microwave.%20Had%20you%20not%20done%20this,%20the%20next%20step%20would%20take%20about%2015%20minutes%20or%20so%20to%20get%20the%20eggplant%20nice%20and%20soft.%3C/p%3E%3Cp%3EAdd%20the%20onion%20mixture%20back%20into%20the%20pan%20along%20with%20the%20ground%20coriander,%20cumin,%20and%20salt.%3C/p%3E%3Cp%3ECover%20the%20pan%20reduce%20the%20heat%20and%20cook%20for%20about%203%20minutes%20to%20make%20sure%20all%20the%20flavors%20have%20blended.%3C/p%3E%3Cp%3EAdd%20in%20the%20tamarind%20paste%20(or%20lemon%20juice)...%3C/p%3E%3Cp%3E...and%20the%20jaggery%20or%20brown%20sugar.%3C/p%3E%3Cp%3EMix%20everything%20around%20then%20toss%20in%20your%20chopped%20fresh%20cilantro.%3C/p%3E%3Cp%3ECheck%20the%20seasoning,%20and%20add%20more%20salt%20if%20you%20need%20to.%3C/p%3E%3Cp%3EOther%20than%20that...that's%20it.%3C/p%3E%3Cp%3EYou%20can%20serve%20it%20up.%3C/p%3E%3Cp%3EThis%20dish%20goes%20well%20with%20just%20a%20simple%20Basmati%20rice%20dish,%20and%20some%20chapatti,%20or%20it%20can%20also%20accompany%20any%20Western%20style%20meal.%20Even%20my%20eggplant%20(let's%20not%20say%20hating)%20husband%20liked%20this%20dish,%20and%20all%20the%20eggplants%20that%20have%20been%20set%20before%20him%20are%20starting%20to%20win%20him%20over.%20Actually%20I%20think%20he;s%20just%20relieved%20because%20of%20everything%20we%20planted%20this%20spring%20the%20only%20thing%20that%20didn't%20come%20up%20...was%20the%20okra.%20So%20he's%20feeling%20pretty%20welll....good%20might%20be%20the%20word.%3C/p%3E%3Cp%3EComing%20up%20next.,.%20the%2
