Ingredients
- 1 med. eggplant, pared and cut into circles
- Dash of salt
- 8 ounce tomato paste
- 1 c. Parmesan cheese, grated
Directions
- Salt the eggplant slices, then let drain on paper towel. Lay the eggplant slices flat in a baking pan or possibly on a cookie sheet. On each slice, spread a layer of tomato paste and sprinkle well with the grated cheese. Bake at 350 degrees for 20 to 30 min.
