Ingredients

  • 1 lb Hamburger
  • 1 x Onion, minced
  • 1/2 x Green pepper, minced
  • 1 x Clove garlic, crushed
  • 1 x Eggplant
  • 1 can (no. 2) tomatoes
  • 1 can Tomato paste
  • 3 Tbsp. Salad oil
  • 1/2 lb Mozzarella cheese Grated Parmesan cheese

Directions

  1. Saute/fry onion, green pepper & garlic in oil. Add in hamburger & brown, adding salt & pepper to taste and 1 bay leaf if you like. Add in tomatoes & tomato paste & simmer about 1 hour. Peel & slice eggplant. Salt, pepper & flour each slice. Brown in oil in a separate skillet. In a casserole, pladce layer of eggplant & cover with some of the sauce, then add in a layer of Mozzarella. Repeat these layers again & top with grated Parmesan. Bake at 350 for 45 min.
