Eggnog and Rum Cake (Cake Mix)

Wonderful holiday cake recipe using cake mix and commercial eggnog.

Ingredients

  • 1 box butter or yellow cake mix
  • 1 cup eggnog
  • 3 eggs
  • 1/3 cup applesauce
  • 2-3 tbs. rum
  • 4 tbs. melted butter, or oil
  • 1/2 tsp. cinnamon
  • icing: canned buttercream or homemade (see links)
  • topping: toasted sliced almonds

Directions

  1. Heat oven to 350 F.
  2. Mix cake ingredients together and pour into a greased bundt pan.
  3. Bake 30-35 minutes.
  4. Let cool, invert, place on a cooling rack.
  5. Frost and sprinkle on almonds.
