But just one day may not be enough to show our love, we should be ready to express our love the other 364 days too. What ever may be the reason behind celebrating this lovely day, make the most out of it and wish that each day of year is another Valentine day filled with unbound love in each heart.

To express true love an expensive gift is not necessary. A cute red rose, a small hug, a few words of appreciation and even cooking something which is liked by your loved ones can do the trick. And I baked this light and extremely delightful dessert Vanilla Cake with Fruit Custard for all whom I love. Yes it includes you too, who are reading my post right now

Read it somewhere that ‘Love is not a feeling or an emotion but is rather a courageous decision for one to offer to another human being the gift of freedom. For when we truly love someone, that person is always free to stay or go, and free to become exactly who God has created him or her to become’. This makes me think that the ‘Gift of freedom’ does come gradually with experience and years of togetherness. As I feel more confident now, to extend it (gift of freedom) to my beloved ones which never used to be the same a couple of years back.

Now for the recipe of one of our favorite desserts, which is quite simple to make and is a perfect treat for any day.

Eggless Vanilla Cake;

Ingredients;

Method; Grease a small round cake tin with oil and preheat it at 180°C for 10 minutes.

Sieve both the flours, baking powder & baking soda thrice and keep it aside. Combine sugar, vanilla essence and oil in another vessel till the sugar is dissolved.

Mix the curd with the baking soda and add it to the oil & sugar mixture.

Add the dry flour mix to the above wet ingredients and mix gently with a spatula till all the ingredients are mixed. Pour the batter into the preheated baking tin. Bake the cake at 180°C for about 30 minutes or till done.

Check the cake by inserting a toothpick or a clean knife. Remove from baking tin the oven and cool the Vanilla cake for 15-20 minutes before slicing it.

Slice the cake evenly and arrange in a shallow decorative dish. Drizzle the vanilla custard over the cake and refrigerate it for 8-10 hours. This ensures that the cake slices become well soaked in the custard and are moist when served.

Reserve a few slices to have it with your tea the next day! Or just spread a teaspoon of Nutella over it and indulge…

Served in individual dishes with custard and fruits.

Take small glass bowls and put the soaked cake slice in it. Pour some more custard if you wish. Add fruits of your choice.

Chilled overnight and the first bite...

The soaked cake slices in the custard are to be tasted to believe the heavenly taste! The fruit pieces gives a crunchy & refreshing feel to the delectable dessert.

Serve the dessert in a vine glass for an exotic look. Arrange the dessert and refrigerate it for 8-10 hours.

Note;

Make this dessert a day ahead and refrigerate for much better taste.

Use ready made cakes available off shelves, if you are short on time.

Add fruits of your choice to get a more colorful and scrumptious dessert.

Replace the wholewheat flour with refined flour (maida) if you need extra light cake.

Soaking the Vanilla cake overnight in refrigerator helps in getting the custard seep in giving a very soft and delightful dessert.
