Eggless Sugarless Carrot Cake

Ingredients

  • 1/2 c. grated carrots
  • 1 1/4 c. minced dates or possibly prunes
  • 1 1/3 c. water
  • 1 c. raisins
  • 1/4 c. butter
  • 1 teaspoon each: cinnamon, cloves, nutmeg
  • 1 teaspoon baking pwdr
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1/2 c. minced nuts
  • 2 teaspoon Sweet Ten

Directions

  1. Place carrots, dates, water, raisins, butter and spices in a saucepan. Bring slowly to a boil and simmer for 5 min. Cold thoroughly. Meanwhile stir together dry ingredients, Sweet Ten and nuts. Add in to cooled mix. Stir till blended. Pour into a greased and floured 9 inch ring mold and bake at 375 degrees for 45-50 min. NOTE: A glass cake pan may be used. Reduce baking time to approximately 30 min.
