eggless microwave fruit cake

I love to make cakes in microwave as I find it very easy and less time consuming this way.The only downside to microwave cake making is that you will not get the desired level of golden brown layer on top but it really doesn't bother me that much as I can save on so much time.Well you can make any cake in the microwave but here i have one wonderful recipe for a fruitcake that takes less than 10 minutes to make!.It will take even lesser time to finish it off-it's that yum!.I usually make this for desert and serve it with some caramel or butter scotch sauce or with a dollop of Hokey-pokey ice cream(authentic New Zealand flavour) on the side.Do try this one and you will not be disappointed at all.

Ingredients

  • All Purpose Flour - 1 1/4 cup
  • Baking soda - 1/2 tsp
  • Baking powder-1/2 tsp
  • cocoa-1 and 3/4 tbsp
  • Milk powder-2 tsp(optional)
  • Dark Brown Sugar - 1/2 cup
  • Oil - 1/4 cup
  • Honey or golden syrup - 6 tbsp
  • Dried Fruits - 1/2 cup (Raisins, Dates,Cherry, Sultanas, mixed candied fruit peel)
  • Nuts - 3 tblspn -walnuts and almonds will do
  • Water - 1/2 cup
  • Plain yogurt-2 tbsp

Directions

  1. Warm water in microwave for 1-2 mins.Add in dried fruits,peels and nuts and let it soak for 2-4 mins.
  2. Meanwhile seive flour, cocoa,milk powder, baking soda and baking powder together in a bowl and mix well.
  3. Now take the dried fruits soaked mix, add in sugar, oil, honey/golden syrup and yogurt and mix well.
  4. Add the flour mix into this and mix well.
  5. Take a microwave safe bowl, brush all side with oil. Pour the batter in, don't fill too much, just fill half way.
  6. Put in microwave and cook for 5 mins.Test if cooked fully if not pop it in for another 2-3 mins.It should be done by then.. When it is done,let it cool for 10 mins.
  7. Now invert it, slice and serve with your favourite sauces or icecream or just a dollop of whipped sweet cream.
