Eggless Applesauce Cake

Delicious and good for the holidays.

Ingredients

  • 1 3/4 c. flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 c. butter or shortening
  • 1 c. sugar or (1/2 white and 1/2 brown)
  • 1 c. applesauce
  • 1 c. raisins
  • 1/2 c. nuts (crushed)

Directions

  1. Soften butter. Add in sugar and applesauce. Mix well.
  2. Blend together all dry ingredients, and add in to the applesauce mix. Add in raisins and mix well. Add in nuts and mix well.
  3. Grease 8 inch square cake pan or baking dish.
  4. Turn into the greased cake pan. Bake at 350 degrees for 45 to 50 min until done.
  5. If glass baking pan is used, lower the baking to 325 degrees (till done).
