Nine inch pie crust recipe from Edible Communities, a network of regional food magazines. Excellent, super flaky and delicious.

  • 1 1/4 cups AP flour
  • 1/4 tsp. salt
  • 1 stick cold unsalted butter
  • Up to 6 tbs. ice cold water
  • optional: 1 tbs. sugar

Directions

  1. Blend the flour with the salt (and sugar, if using).
  2. Cut the butter into little cubes, add to flour.
  3. Using a fork or a pastry cutter, blend the ingredients together until the mixture looks like crumbs and small peas.
  4. Add 4 tbs. or more water and blend with a fork, working the dough into a ball.
  5. Cover and refrigerate an hour or longer.
  6. Flour your workspace, roll the dough out to 11" diameter.
  7. Gently lift the dough and place in the pie pan.
  8. Fold and crimp the edges, or use a fork tine to decorate the edges. Use the tine to poke some holes in the dough.
  9. Place in the freezer while you prepare your filling.

  11. Pre-bake pie crust, if your recipe calls for it. Heat oven to 375 F and bake for 20-30 minutes.
