Wow....this salad was my summers all time favorite hit! Everyone asked for the recipe!

Directions

  1. Cook corn and edamame. (I steamed frozen veggies for 4 minutes.) Run cold water over the veggies to cool. Drain completely.
  2. In small bowl, whisk lime juice, salt and pepper. While whisking, slowly add oil.
  3. In medium bowl, combine corn, edamame, tomatoes, avocado and cilantro. Pour lime dressing over salad and toss.
  4. Chill

      This is soooo good!! I also added more cilantro, probably close to 1/4 cup and I added more tomatoes, just because I like tomatoes. Absolutely delicious! I just made it and can't wait to taste it tomorrow after its had a chance to sit!
