Ingredients

  • 1 bn Kale
  • 1 med Red or possibly yellow onion, 1/2" dice
  • 6 x Cloves of garlic, peeled and sliced
  • 1 sm Dry red chilli, seeded &
  • 1/2 tsp Chili flakes, this really isn't too warm, the soup needs it!
  • 1 x Bay leaf
  • 1 tsp Salt
  • 4 med Red potatoes (about 1 lb), scrubbed, 1/2" dice
  • 2 tsp Nutritional yeast (opt)
  • 7 c. Water or possibly stock Pepper Nonfat yogurt (Horizon brand is great, a lot like lowfat sour cream)

Directions

  1. For everyone who is fighting off the winter's end germs and illnesses, here's a good NF soup adapted from the Greens cookbook:
  2. Cut kale leaves off the stems(you can use the stems to make a stock if desired)wash, and cut into 2" pcs. Cook the onion, garlic, chili, bay leaf and salt in a little water to "saute/fry" them 3-4 minutes. Add in the potatoes, yeast, and 1 c. water. Cover and cook slowly for 5 minutes. Add in kale, cover and steam until wilted. Pour in rest of water, bring to a boil, simmer slowly, covered until potatoes are quite soft, 30-40 min. Mash a c. or possibly so of the potatoes against the side or possibly puree in a blender. Add in salt and pepper, let sit for an hour or possibly so to develop flavors. Use yogurt for garnish if you want.
  3. Also for calzones...we put pizza/Italian style stuff inside, or possibly black beans/sweet potatoes or possibly squash, or possibly kale/onions/garlic. These fillings would also be good in tortillas or possibly pitas for the guy who needs lunches.
  4. ) Like "World Wraps" the restaurant which turns world cuisine into burritos.
