Easy Waffle Batter Recipe

Ingredients

  • 1 1/3 c. All-purpose flour
  • 2 Tbsp. Sugar
  • 2 tsp Baking pwdr
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 1/2 tsp Salt (optional) ( I do not use salt myself.
  • 3 Tbsp. Oil

Directions

  1. Whip the Large eggs till at least somewhat frothy, then add in all other ingredients and mix till almost smooth. It should be slightly lumpy. Add in sufficient batter to cover about 80% of a very Warm waffle iron and cook till it stops steaming ( 4 min). You can vary the thickness of the batter by adjusting the amount of lowfat milk. I usually use more than the 1 c. stated above. Also, the more whipped the Large eggs, the lighter the waffle.
  2. Makes about4 9" squares".
  3. You may need to season your waffle maker the first time with a little spray on "oil" like Pam, but after a couple of times, there should be no sticking.
