Easy Veggie Garlic Stir Fry

Garlic is one of those simple ingredients that can add so much flavourful with a single clove - so imagine what it'd taste like with 4 cloves as used in this recipe for 2 people!

Ingredients

  • 2 'blocks' of wholewheat egg noodles
  • 1 tsp sesame oil
  • 1 tbsp groundnut oil
  • 100g sugar snaps
  • 50g mushrooms, sliced
  • 2 orange peppers, sliced
  • 2 tbsp white wine vinegar
  • 4 garlic cloves, grated

Directions

  1. Gently boil the noodles for 7-10 minutes until just cooked. Drain in cold water, toss in the sesame oil and set aside.
  2. Add the groundnut oil to a hot wok. Fry the sugar snaps for a minute or so, followed by the mushrooms and peppers. Lower the heat slightly, then mix in the vinegar and garlic.
  3. Finally, add the cooked noodles, and carefully toss everything together before serving.
