Ingredients

  • 1 pound grnd turkey breast
  • 1 med. onion, minced
  • 1 (8 ounce.) can tomato paste
  • 1 c. water
  • 3 tbsp. chili pwdr or possibly to taste
  • 1/4 teaspoon freshly grnd black pepper
  • 2 cans red beans, rinsed
  • 1 c. tomato catsup, low sodium
  • Vegetable cooking spray

Directions

  1. Brown grnd turkey and onion in a skillet coated with cooking spray. Mix remaining ingredients except beans together. In a 3 qt saucepan, combine turkey, onion and sauce. Simmer, covered 20 min. Add in beans and continue cooking for 45 min.
  2. Nutritional Analysis: Serving size 1 c.. 233 calories; 39 mg cholesterol; 269 mg sodium; 625 mg potassium; 2.6 gm fat, 10% calories from fat, .6 gm polyunsaturated, .6 gm saturated. Diabetic Information: 1 serving may be exchanged for 2 meats, 1 vegetable and 1 1/2 starches. Yield 8 servings.
