Easy Tex-Mex Layered Casserole Dip Recipe

  • 8 oz. cream cheese, room temp
  • 8 oz. sour cream
  • 2-3 tbs. scallions, chopped
  • 1/2 cup favorite salsa
  • 2 seeded, diced Roma tomatoes
  • 6 oz. sliced black olives
  • 1 cup shredded cheese (I use extra sharp cheddar, or Pepper Jack)
  • paprika
  • If making ahead of party, put it in the fridge until guests arrive.

Directions

  1. Heat oven to 350 F.
  2. Blend cream cheese and sour cream.
  3. Put in the bottom of a 1 qt. baking dish.
  4. Top with scallions, then salsa, then olives.
  5. Top with cheese, sprinkle on paprika.
  6. Bake until cheese has melted, about 12-15 minutes.
  7. Easily doubles for a larger group.
