Directions

  1. 1) Put red pepper, green pepper, onion and celery in a food processor. Process till the vegetables are minced coarsely. Transfer to a colander and let drain for 10 min.
  2. 2) Combine sugar and vinegar in a medium saucepan. Bring to boil over moderate heat and cook for 2 min. Add in the liquid removed vegetables, return to boil and cook for 2 min. Spoon into serving dishes or possibly storage containers and let cold. Store in refrigerator.
  3. Makes almost 3 c.: per 1/4-c. 36 cals, (1% cff)
