Easy Potato Gnocchi

Ingredients

  • 4 large or 5 average potatoes
  • 2 egg yolks
  • 1/2 cup of grated Parmesan cheese
  • 1 and 1/4 cups of flour
  • 2 teaspoons salt

Directions

  1. Bake potatoes.
  2. When they have cooled enough to handle peel them and mash.
  3. Add remaining ingredients.
  4. Knead with your hands until it is well mixed.
  5. Dough should not be sticky or feel wet
  6. If it is, add a little more flour
  7. On a floured surface roll portions of the dough out into 1/2 inch rope.
  8. Cut pieces of the rope at 1/2 inch lengths.
  9. Boil about two minutes.
  10. Makes about 1 1/2 pounds
