So I absolutely love that my girl Carrie is sharing this recipe with y'all today! She wasn't a huge fan of zucchini but I helped convince her that it is such a yummy vegetable! And now she has a delicious, carb-free, kid-friendly recipe she & her family love!!

Today, I'd like to share with you my Easy Pizza Zucchini Bites. We have a HUGE crop of zucchini from our little city, side of our house garden. For us, bringing in 3-4 zucchini a day is a lot! And, I've shredded and frozen 10 bags of it! Lots of zucchini bread coming our way this fall and winter! But, my husband I also like to eat it "fresh". So, I've been exploring new ways to make it...and to keep in line with our "low/no" carb diet, these are perfect for our Friday night family pizza night. I am making pizza for the kids anyway, so I throw one in the oven for them, and then add these for my husband and I.

Easy Pizza Zucchini Bites

Ingredients:

Directions:

1. Heat your oven to 350 degrees. Slice your zucchini, making sure the slices aren't too thin. If so, they won't stand up to the toppings while baking.

2. Arrange them on a baking sheet.

3. Spoon a little sauce on each one. Add some cheese, pepperoni, and top with parmesan cheese.

4. Bake at 350 for about 20 minutes, or until the cheese gets golden brown.

Easy! Done! So good!

Note: We only used half a piece of pepperoni on ours.

These are SO easy, and we've even grilled ours. Enjoy!
