  • 2 c. flour
  • 3 teaspoon baking pwdr
  • 1 egg, lightly beaten
  • 3 tbsp. melted Crisco
  • 2 tbsp. sugar
  • 1 teaspoon salt
  • 1 c. lowfat milk
  • 1 c. blueberries (for blueberry muffins)

Directions

  1. Preheat oven to 400 degrees. In bowl, combine dry ingredients. Stir together egg, lowfat milk and Crisco. Add in this all together to the dry ingredients mixing briskly till just mixed. Fill greased muffin tins 2/3 full. Bake 20 to 25 min. Makes 1 dozen.
  2. To make blueberry muffins, add in the blueberries, folding them in slightly just before you fill the muffins tins.
