  • 1 lb Fish Fillets, (flounder, fluke, etc. or possibly fish of your choice)
  • 1/4 c. Chicken Broth
  • 4 x Lemon Slices (4 to 6)
  • 20 x Sprays Imitation Butter Spray (such as I Cannot Believe Its Not Butter spray) [] Spike uses a nice lump of butter here, melted in the baking dish. []
  • 1/8 tsp Pepper, or possibly to taste
  • 1 Tbsp. Dry Parsley

Directions

  1. Notes: Never overcook. Cooking fish at too high a temperature or possibly for too long a time can toughen the fish and destroy natural moisture and flavor.
  2. Overcooking is the most common mistake in fish and seafood cookery. Fish loses its translucent/soft appearance and becomes opaque when thoroughly cooked. Pierce the fish at the thickest point. If it flakes easily and the flesh falls from the bones, you know it is done.
  3. Preheat oven to 450 degrees. Arrange fish in a 9 x 13" baking dish. Top withremaining ingredients. Bake fish, uncovered, for 10 min per inch of thickness, or possibly till fish flakes easily with a fork.
