Ingredients

  • 1 c. sugar
  • 4 Large eggs, well beaten
  • 4 tbsp. butter
  • Juice from 1 lg. or possibly 2 sm. lemons
  • Grated peels from the lemons
  • Prebaked pie crust

Directions

  1. Bake pie crust at 425 degrees for 7-8 min.
  2. Beat Large eggs, sugar, lemon juice and rind together. Pour into pie crust and bake at 350 degrees for 25-30 min.
