Easy Deviled Egg Spread is a delicious and quick 20 minute recipe for a large gathering or event. Great for holiday crowds as well. Made with healthy ingredients to make it diet friendly. It is a low calories, low fat, low sodium, low sugars, low carbohydrates, diabetic and Weight Watchers (2) PointsPlus per serving recipe. Serve with cut up vegetables and crackers.
Ingredients
- 12 hard boiled eggs, divided
- 3/4 cup light reduced-fat mayonnaise
- 1/2 of (8-oz) bar Neufchatel cheese, cubed, softened
- 2 tbsp white vinegar
- 1 tbsp Dijon mustard
- 3 green onions, sliced, divided
- 1/8 tsp paprika
Directions
- Reserve 1 egg for garnish. Cut remaining eggs lengthwise in half. Remove yolks; place in food processor. Add mayonnaise, Neufchatel, vinegar, mustard and 12 of the egg white halves; process until blended. Spoon into medium bowl.
- Chop the remaining egg white halves coarsely. Add to Neufchatel mixture with 2/3 of the onions; mix lightly.
- Chop reserved egg finely; sprinkle over egg mixture in bowl along with remaining onions. Garnish with paprika. Serve with assorted cut up fresh vegetables and crackers if desired.
