Ingredients

  • 1 cup butter
  • 1 cup water
  • 2 1/4 cups cake flour
  • 2 cups white sugar
  • 2 eggs, lightly beaten
  • 1/2 cup sour cream
  • 1/4 teaspoon vanilla extract
  • 3/4 teaspoon coconut extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup canned coconut milk, shaken
  • Whipped Coconut Icing Ingredients:
  • 1 1/2 cup milk
  • 7 tablespoons plus 1 1/2 teaspoons flour
  • 1 3/4 cups plus 2 tablespoons granulated sugar (not powdered sugar)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons coconut extract
  • 3/4 cup butter, at room temperature
  • 3/4 cup coconut plus more for topping
