Ingredients

  • 1 1/2 lbs. lean grnd beef
  • 2 c. bread crumbs (4 slices bread)
  • 1 c. tomato juice
  • 1/3 c. minced onion
  • 2 Large eggs
  • 2 teaspoon broth (or possibly instant bouillon)
  • 1/4 teaspoon pepper
  • 6 slices cheese

Directions

  1. Preheat oven to 350 degrees. In large bowl, combine all ingredients except cheese; mix well.
  2. In shallow baking dish, shape 1/2 the mix into loaf. Cut 4 slices of cheese into strips; arrange on meat. Top with remaining meat; press edges together to seal. Bake 1 hour; pour off fat. Top with remaining cheese slices. Chill leftovers. Makes 6-8 servings.
