Ingredients

  • 1 pkt Flour tortillas, (10 to 12)
  • 1 lb Bulk sausage
  • 1 med Onion, minced
  • 8 x Large eggs, beaten (8 to 10)
  • 2 c. Shredded monterey jack cheese

Directions

  1. Sprinkle tortillas with water and stack on foil; seal tightly. Hot in 325F oven. Cook sausage with onion in skillet over medium heat, stirring till sausage is crumbly. Remove sausage to hot dish with slotted spoon, reserve drippings. Stir Large eggs into drippings in skillet. Cook till Large eggs are set, stirring frequently. Add in sausage; mix well. Spoon onto tortillas; sprinkle with cheese. Roll tortillas to enclose filling. Serve hot with refried beans, sliced avocados and picante sauce.
