Wow. Can you believe I actually survived my blogging hiatus? A whole week without posting. First time I have ever done that since I started blogging almost three years ago. It was actually quite refreshing. I spent the entire week with my family. We went golfing, we watched movies, we relaxed, we visited family, we made a lot of junk food, we ate out, we played at least 6 rounds of Killer Bunnies. And I didn't feel like I had to take a single picture so I could blog about it.

But I will admit that by the end of the week I started getting a little antsy. I missed my online peeps! My computer was calling to me like a bowl of ice cream calls to a girl on a diet. But I stayed strong. I resisted. I accomplished my goal. But boy am I glad to be back!!

These are one of the treats that we made this week. With Easter less than a week away, I was dying to try out some new Easter recipes. I found these nest cookies in an old cookbook by Alisa Bangerter. They turned out so stinking cute! I used Reese's eggs, but any egg shaped candy will do. I loved the flavor the cream cheese added to the cookies. I actually saved half of the dough so I can experiment with different additions. Can't wait to try a bunch out and share the results with you! But in the meantime, make these cute nest cookies. They are sure to brighten up your Easter festivities!

Easter Recipe- Bird's Nest Cookies

Egg shaped candies: Reese's eggs, Cadbury eggs, Peanut M&M's or jelly beans work great!

Beat together butter and cream cheese till smooth. Beat in sugar. Add egg, vanilla, and extracts. Mix well. Stir in the flour and baking powder. Roll dough in balls (about the size of ping pongs). Place on lightly greased cookie sheets. Make an indentation in each one using the back of a Tablespoon. Bake at 350 for 10-12 minutes. Cookies won't brown. Remove from oven and use the spoon to press down the indentation again. Let cookies cool completely. Mix coconut with a couple of drops of green food coloring in a small bowl with a lid. Cover and shake till coconut is tinted green. Fill nests with coconut, and add a few egg candies.
