Easter Bunny Surprise Cupcakes Recipe

Ingredients

  • 1 - (15.25 ounce) box french vanilla or white cake mix (I used Betty Crocker french vanilla)
  • 1/2 - cup canola oil or melted butter or (amount called for on box mix)
  • 4 - eggs, room temp (add one additional egg than called for on box mix)
  • 1 - cup milk (substituted for amount of water called for on box mix)
  • 1 - teaspoon clear vanilla or butter extract
  • Candy Filling:
  • Easter sprinkles
  • 1 - bag Hershey chocolate eggs or Cadbury Mini Eggs
  • For the White Chocolate Pudding Frosting:
  • 1/2 - cup butter, softened
  • 1/2 - cup coconut oil, shortening or (use all butter)
  • 1 - 3 oz box instant white chocolate instant pudding mix
  • 1/2 - cup milk
  • 1 - cup powdered sugar
  • 1/2 - cup sweetened coconut
