We love to combine Italian and asian vegetables. This Frittata is great for brunch or breakfast. Add brown, baby portabella or shitake mushrooms or thinly sliced potatoes for a different texture. Please note that this dish serves 10-12 as an appetizer and 4 as a main dish.
Ingredients
- 1 baby bock Choi, rinsed and cut into 1â pieces
- 1 bunch Swiss chard, rinsed and cut into 1â pieces
- ½ onion, thinly sliced
- 1 can quartered artichoke hearts, water packed
- 1 tsp. garlic, thinly sliced
- 2 Tbls virgin olive oil
- Salt, pepper, crushed chili to taste
- 4-6 eggs
Directions
- Sauté Baby Bock Choi in olive oil with garlic, then sauté Swiss chard.
- Combine all ingredients.
- Spray with non stick spray, a 10â cast iron frying pan, or 1:â deep dish that is 10â in diameter.
- Place ingredients into pan, then add eggs that have been whipped.
- Bake at 350 degrees for 30-35 minutes until firm to the touch in the center.
- Let set for 15 minutes and flip onto a plate, twice, so the original side is up.
