East Meets West Frittata Recipe

We love to combine Italian and asian vegetables. This Frittata is great for brunch or breakfast. Add brown, baby portabella or shitake mushrooms or thinly sliced potatoes for a different texture. Please note that this dish serves 10-12 as an appetizer and 4 as a main dish.

Directions

  1. Sauté Baby Bock Choi in olive oil with garlic, then sauté Swiss chard.
  2. Combine all ingredients.
  3. Spray with non stick spray, a 10” cast iron frying pan, or 1:’ deep dish that is 10” in diameter.
  4. Place ingredients into pan, then add eggs that have been whipped.
  5. Bake at 350 degrees for 30-35 minutes until firm to the touch in the center.
  6. Let set for 15 minutes and flip onto a plate, twice, so the original side is up.

    I forgot how much I like Frittata's. This was wonderful; used an indonesian chili paste instead of crushed chili and used Asparagus instead of bock Choi / swiss chard (didn't have any). But the preparation in this recipe is really easy and very, very good. I used 4 eggs and only needed about 18-20 minutes in the oven...
    I've cooked/tasted this recipe!
