%20everywhere.%20It%20might%20not%20be%20for%20everyone%20but%20for%20durian%20lovers,%20it%20is%20without%20a%20doubt%20a%20sinful%20indulgence.%20Of%20course%20I%20love%20this%20spiky%20fruit%20too%20and%20have%20been%20eating%20durian%20for%20the%20past%20few%20days%20and%20luckily%20I%20didn't%20get%20sore%20throat%20as%20durian%20is%20a%20heaty%20fruit.%20To%20match%20the%20theme%20Aspiring%20Bakers%20%239%20-%20Swiss%20Rolling%20Good%20Times%20(July%202011)%20hosted%20by%20Obsessedly%20Involved%20with%20Food,%20I%20made%20Durian%20Ice%20Cream%20Roll!%20Here%20you%20are,%20please%20enjoy%20this%20cool%20dessert%20if%20you%20are%20a%20durian%20lover%20:)%3C/p%3E%3Cp%3EPrepare%20Durian%20Ice%20Cream%3C/p%3E%3Cp%3E2%20Triangle%20moulds%20(line%20with%20plastic%20sheet)%3C/p%3E%3Cp%3E300g%20Fresh%20durian,%20mash%20with%20a%20spoon%20or%20fork%3C/p%3E%3Cp%3E1.5L%20Durian%20ice%20cream%20(Magnolia%20brand)%3C/p%3E%3Cp%3E200g%20Fresh%20topping%20cream%3C/p%3E%3Cp%3E6%20Gelatin%20leaf%20(optional)%3C/p%3E%3Cp%3ETake%20out%20ice%20cream%20from%20freezer%20and%20leave%20at%20room%20temperature%20(about%205%20mins)%20before%20you%20start%20to%20whip%20the%20fresh%20cream.%3C/p%3E%3Cp%3ESoak%20gelatin%20leaf%20in%20cold%20water%20about%2030%20seconds,%20allowing%20it%20to%20soften.%20Remove%20from%20water%20and%20gently%20squeeze%20well.%20Under%20double%20boiler,%20allow%20the%20gelatin%20to%20melt%20and%20stir%20well.%20Once%20it%20melted,%20remove%20from%20heat,%20cool%20down%20melted%20gelatin%20to%20a%20little%20warm.%20%20Whisk%20fresh%20cream%20and%20add%20gelatin%20into%20it.%20Whisk%20fresh%20cream%20till%20very%20stiff.%3C/p%3E%3Cp%3EAdd%20durian%20ice%20cream%20into%20it,%20mix%20at%20medium%20speed%20for%20about%2030%20seconds%20then%20add%20mashed%20durian%20fold%20well%20with%20a%20hand%20a%20rubber%20spatula.%3C/p%3E%3Cp%3EPour%20the%20durian%20ice%20cream%20into%20prepared%20mould.%20Then%20wrap%20it%20up%20with%20the%20plastic%20sheet%20and%20put%20in%20freezer%20for%20several%20hours%20or%20till%20next%20day.%3C/p%3E%3Cp%3EKitchen%20note:%20You%20can%20omit%20the%20gelatin%20if%20preferred%20as%20the%20gelatin%20will%20get%20lumpy%20if%20it%20is%20not%20handled%20properly.%3C/p%3E%3Cp%3EPrepare%20a%2012%20x%2012%20inch%20baking%20tray,%20line%20with%20parchment%20paper%20or%20baking%20sheet,%20grease%20some%20oil%20on%20it%20with%20a%20brush.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20mix%20egg%20yolks,%20sugar,%20cooking%20oil%20and%20fresh%20milk%20together%20with%20a%20hand%20whisk,%20add%20durian%20puree,%20mix%20well%20and%20add%20in%20sifted%20flour,%20mix%20well%20again,%20set%20aside.%3C/p%3E%3Cp%3EWhisk%20egg%20white%20to%20foamy%20and%20add%20sugar,%20continue%20to%20whisk%20egg%20white%20to%20smooth%20peak%20form%20at%20medium%20speed.%3C/p%3E%3Cp%3EThen%20fold%201/3%20of%20the%20egg%20white%20to%20the%20egg%20yolk%20mixture,%20fold%20well%20with%20a%20rubber%20spatula%20and%20fold%20in%20the%20remaining%20egg%20white.%3C/p%3E%3Cp%3ETake%20out%20about%20150ml%20mixture%20into%20a%20small%20bowl,%20add%202-3%20tsp%20chocolate%20paste%20and%20mix%20well%20and%20pour%20chocolate%20mixture%20into%20a%20piping%20bag.%3C/p%3E%3Cp%3EPour%20plain%20mixture%20into%20a%2012%20x%2012%20inch%20baking%20tray.%20Level%20the%20surface,%20pipe%20chocolate%20line%20over%20it%20and%20use%20a%20skewer%20and%20drag%20line%20or%20create%20your%20own%20pattern.%3C/p%3E%3Cp%3EGently%20knock%20the%20tray%20on%20table%20top%20to%20remove%20air%20bubbles%20trapped%20in%20the%20batter.%3C/p%3E%3Cp%3EBake%20at%20170C%20for%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20sponge%20cake%20from%20baking%20tray%20and%20place%20on%20wire%20rack%20to%20cool%20down%20completely%3C/p%3E%3Cp%3EPlace%20the%20sponge%20cake%20(choc%20line%20facing%20down)%20on%20a%20plastic%20sheet,%20carefully%20remove%20the%20baking%20sheet%20then%20place%20the%20frozen%20ice%20cream%20on%20top%20(place%20at%20the%20side%20of%20the%20sponge%20cake)%20and%20roll%20it%20up.%3C/p%3E%3Cp%3ETrim%20off%20the%20excess%20sponge%20cake%20with%20a%20knife.%3C/p%3E%3Cp%3EWrap%20ice%20cream%20roll%20with%20plastic%20sheet%20and%20store%20in%20freezer%20for%20few%20hours.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
