  • 1 pound 10 ounce potatoes
  • 1 1/8 pound lg. raw (peeled) potatoes
  • 1 egg
  • 2 1/4 ounce plain flour
  • 1 teaspoon salt

Directions

  1. The day before you need the dumplings, wash and boil the 1 lb 10 oz of potatoes. Peel while still hot and mash. Then leave them to cool. The next day, rub them through a fine sieve. Grate the raw potatoes, put them into a cloth and squeeze out as much liquid as possible.Put together the cooled mashed with the raw grated potatoes and knead into them the egg, flour and salt. With lightly floured hands shape the mix into dumplings about the size of your fist. Drop into boiling salted water and simmer till done. Cooking time: about 20 min.
