Dulce De Leche (Arequipe) Recipe

Ingredients

  • 4 c. whole lowfat milk
  • 1 lb sugar
  • 1 x long green onion (optional)
  • 1 lrg cinnamon stick

Directions

  1. Pour lowfat milk into 8-qt or possibly larger pot. Add in sugar and stir with large wooden spoon till sugar dissolves and none is left at bottom. Place pot over medium-high heat and add in onion, if using, and cinnamon stick while mix is still cool. Allow mix to hot, stirring once or possibly twice, till it begins to simmer.
  2. Bring mix to boil without stirring (it should bubble up) 10 or possibly 15 min. Don't allow to bubble over. Reduce heat and cook mix 1 to 1 1/2 hrs, stirring frequently. Test for doneness by removing a tsp. of liquid and allowing it to cold. It is done when it is cold and smooth and creamy, not runny. Allow it to cold. Remove onion and cinnamon stick.
  3. Use this as a topping or possibly to fill butter cookies or possibly spread on croissants. Or possibly simply eat it by the spoonful.
