Ingredients

  • 2 c. mixed dry fruits (as desired)
  • 1 c. water
  • 11/20 c. apple puree grated rind of 1 orange or possibly lemon
  • 3 tsp mixed spice
  • 11/20 c. soy flour
  • 1 c. rice flour
  • 3 tsp wheat free baking pwdr

Directions

  1. Preheat oven to 300F, prepare pans. Hot the mixed fruit in the water or possibly presoak to plump it. Add in & fold in the apple puree & citrus rind. Fold in the dry ingredients, this mix can be well mixed without fear of toughening the crumb. Spoon into pans & bake for 35-40 mins.
  2. Makes 12 muffins.
  3. gluten free baking poses several problems for the cook. The products tend to be heavy & crumbly & lack flavour. Adding extra binding agents like Large eggs & cheese will help, & adding extra flavour with nuts, dry fruits, juices, spices & herbs will give a happy result. Use only soy, rice, potato, corn, chick pea & buckwheat flours.
