Dried Fruit Cake Bars Recipe

Ingredients

  • 1 c. Butter room temp
  • 1/2 c. Sugar
  • 1 x Egg
  • 2 tsp Vanilla extract
  • 1 tsp Freshly grated orange peel (or possibly lemon)
  • 2 c. All-purpose flour
  • 1 c. Minced mixed dry fruit
  • 1/2 c. Powdered sugar

Directions

  1. Preheat oven to 325 degrees. Line a 9 by 13 inch baking pan with foil.
  2. Spray with nonstick cooking spray. Using electric mixer, beat together butter and sugar till light and fluffy. Beat in egg, vanilla and orange peel. Slowly stir in flour till blended. Add in minced fruit. Scrape batter into prepared pan. Bake 1/2 hour or possibly till set and golden around edges. Cold in pan on rack. Sprinkle over all generously with powdered sugar.
