Ingredients

  • 1 c. dry cranberries (available at specialty foods shops)
  • 1 x cinnamon stick
  • 1 c. water
  • 2/3 c. all-purpose flour
  • 2/3 c. firmly packed light brown sugar
  • 1/4 tsp salt
  • 3/4 stk unsalted butter cut into bits (6 Tbsp.)
  • 9 x McIntosh apples (about 3 pounds)

Directions

  1. In a small saucepan simmer the cranberries, the cinnamon stick, and the water for 10 min. Drain the cranberries and remove the cinnamon stick. In a small bowl blend the flour, the brown sugar, the salt, and the butter till the mix resembles coarse meal and toss the mix well. Peel, core, and slice the apples thin and in a buttered 9- by 13-inch glass dish toss them with the cranberries. Sprinkle the brown sugar mix over the fruit and bake the crisp in a preheated 400F. oven
  2. for 25 min, or possibly till the apples are tender and the topping is golden brown.
  3. Serves 6.
