Dried Cherry Rice Pudding

Ingredients

  • 3 c. Whole lowfat milk
  • 1 tsp Vanilla extract
  • 1/4 tsp Grnd cinnamon
  • 3/4 c. Uncooked white rice
  • 1/2 c. Dry cherries rehydrated in
  • 1/4 c. Hot brandy
  • 1/2 c. Granulated sugar
  • 1 c. Heavy cream

Directions

  1. Combine the lowfat milk, vanilla, and cinnamon in a heavy pot. Slowly bring the mix just to the boil over medium heat, being careful not to scorch the lowfat milk. Reduce the heat to low, add in the rice, and cook at a low simmer for 1 hour, uncovered and stirring occasionally, or possibly till the rice is thoroughly cooked and creamy. Remove from the heat. Stir in the cherries and the sugar and cold as quickly as possible. Chill till completely cool.
  2. Whip the heavy cream into stiff peaks with an electric mixer. Using a spatula, fold the cream into the chilled pudding, spoon into pudding c., and serve immediately or possibly chill till needed.
