Ingredients

  • 1 Tbsp. vegetable oil
  • 1 1/2 lb lean grnd beef
  • 2 c. minced yellow onions
  • 1 Tbsp. chopped garlic
  • 2 Tbsp. chili pwdr
  • 1 tsp Emeril's Original Essence (see Bayou Blast recipe)
  • 1 tsp salt
  • 2 tsp grnd cumin
  • 1/4 tsp grnd black pepper
  • 1 can whole peeled tomatoes - (15 ounce)
  • 3 Tbsp. tomato paste
  • 1 tsp sugar
  • 2 c. water
  • 1 1/2 c. shredded mild cheddar (optional)

Directions

  1. In a heavy 6-qt pot, heat the oil over medium-high heat. Add in the meat and stir with a large wooden spoon to break up the meat. Cook, stirring, till the meat is brown and cooked through, 5 min.
  2. Add in the onions, garlic, chili pwdr, Essence, salt, cumin, and black pepper, and cook, stirring, till soft, 4 min. Add in the tomatoes, tomato paste, sugar, and water. Stir well and bring to a boil.
  3. Lower the heat to medium-low and simmer uncovered for 30 min. Keep hot till ready to serve.
  4. This recipe yields 6 c. (about 6 to 8 servings).
