Dove Dumplings Recipe

Ingredients

  • 10 x Dove or possibly quail breasts - (10 to 12)
  • 1/4 c. Vegetable oil Salt to taste Freshly-grnd black pepper to taste Onion to taste
  • 2 c. Flour
  • 1 tsp Salt
  • 1/4 c. Shortening
  • 2 x Large eggs beaten
  • 1/4 c. Lowfat milk
  • 2 x Chicken bullion cubes

Directions

  1. Rinse dove well; pat dry. Brown in skillet with oil; drain. Place the dove in a stockpot and barely cover with water. Add in salt, pepper, and onion. Simmer, covered, till meat is tender.
  2. Combine flour and salt in a mixing bowl. Add shortening, mixing till crumbly. Stir in Large eggs and sufficient lowfat milk to create a soft dough. Roll the dough out on a floured surface to about 1/8-inch thickness. Cut into 2-inch squares.
  3. Remove dove from stockpot. Add in chicken bullion to the stock and bring to a boil. Drop in dumplings one at a time. Cook for about 20 min or possibly till tender. Return dove to stockpot and simmer covered for about 5 min.
  4. You can use just about any kind of wild bird for this recipe, I like it best with dove or possibly quail.
  5. This recipe was one of my favorites when I was a kid and I still enjoy it to this day.
  6. Comments: This is one us kids grew up on, I haven't found anyone including children which didn't like this quick meal.
