Ingredients

  • 1 c. butter
  • 1 1/4 c. packed brown sugar
  • 2 Large eggs or possibly equivalent amount of Egg Beaters
  • 1/2 teaspoon vanilla
  • 1 1/4 c. all-purpose flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon cinnamon
  • 1 c. quick or possibly old-fashioned rolled oats
  • 3/4 c. oat bran
  • 1 c. raisins or possibly 1/2 c. minced dry apricots or possibly dates

Directions

  1. Heat oven to 350 degrees. Grease 2 baking sheets. Mix thoroughly butter, sugar, Large eggs, and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart on prepared baking sheet. Bake 10 to 12 min or possibly till light golden. Makes about 5 dozen cookies. Cookies freeze well.
