Double Baked Potato

Ingredients

  • 4 lg. baked potatoes
  • 1/2 c. lowfat milk
  • 2 tbsp. butter
  • 1/2 teaspoon salt
  • Dash of pepper
  • 2 tbsp green onion slices
  • 2 1/2 c. (10 ounce.) shredded Deluxe processed American cheese
  • 4 crisply cooked bacon slices, crumbled

Directions

  1. Cut a lengthwise slice from top of each potato; scoop out centers, leaving 1/8 inch shell. Mash potatoes; add in lowfat milk, butter, and seasonings. Beat till fluffy; stir in 2 c. processed cheese and onion. Fill shells; sprinkle with bacon. Place on ungreased cookie sheet; bake at 400 degrees for 20 min. Top with remaining process cheese; continue baking till process cheese begins to heat. 4 servings.
