Ingredients
- 1 1/2 c. Celeriac
- 3 Tbsp. Lemon juice
- 2 Tbsp. White wine vinegar
- 1/4 tsp Black pepper
- 1/2 tsp Salt
- 1 tsp Mustard pwdr
- 3 Tbsp. Mayonnaise
- 5 Tbsp. Lowfat sour cream
Directions
- Grate 1-1/2 C. peeled raw celery root on finest shredder.
- Add in other 7 ingredients: lemon juice through lowfat sour cream. Mix well. Leave for 1-2 hrs in refrigerator. Mix again. Serve on tiny crackers like wheat thins.
- VARIATION: use lowfat mayonnaise and substitute lowfat plain yogurt, liquid removed, for the lowfat sour cream.
