Ingredients
- Chocolate Pound Cake
- Closely adapted from Melissa Gray, All Cakes Considered
- 3 cups AP flour (fluffed, scooped, leveled)
- 3 cups sugar
- 1/2 cup natural unsweetened cocoa powder (I used Scharffen Berger)
- 1/2 cup (1 stick) unsalted butter, room temperature, cut into tablespoons
- 1 cup shortening, room temperature (I used Earth Balance)
- 1 1/4 cups milk (I used 1% with some cream)
- 1/2 t baking powder
- 1/2 salt
- 1 t vanilla
- 5 large eggs

.%20So%20I%20have%20thought%20long%20and%20hard%20about%20how%20to%20write%20this%20recipe,%20and%20this%20is%20the%20conclusion%20I%20came%20to:%20this%20cake%20is%20from%20All%20Cakes%20Considered,%20the%20one%20with%20all%20the%20ginourmous%20tube%20cake%20recipes.%20I%20think%20maybe%20this%20cake%20is%20just%20too%20moist%20and%20dense%20to%20be%20this%20large,%20so%20given%20that%20it%20released%20beautifully%20from%20a%20NON-non-stick%20pan,%20I%20would%20bake%20it%20in%20a%20simple%20nonstick%20bundt%20pan%20(like%20the%20original%20bundt,%20or%20the%20heritage%20bundt,%20not%20one%20of%20those%20pans%20with%20tiny%20nooks%20and%20crannies,%20like%20the%20castle%20pan)%20and%20bake%20the%20remaining%20batter%20in%20mini%20loaf%20pans.%20And%20of%20course%20watch%20it%20carefully%20as%20it%20will%20bake%20in%20a%20shorter%20amount%20of%20time.%20(You%20could%20also%20try%20baking%20it%20in%202%209X5%20loaf%20pans,%20now%20that%20I%20think%20on%20it.)%3C/p%3E%3Cp%3EOne%20note%20about%20the%20baking%20instructions:%20they%20differ%20from%20the%20classic%20cream%20the%20butter%20and%20sugar,%20add%20the%20eggs%20then%20liquid%20and%20dry.%20Melissa%20Gray%20specifically%20notes%20that%20using%20the%20classic%20cake%20directions%20results%20in%20a%20much%20lighter,%20taller%20cake,%20and%20she%20prefers%20this%20cake%20dense%20and%20rich.%20I%20think%20I%20do%20too.%20So%20follow%20the%20quirky%20directions%20for%20a%20denser%20cake.%3C/p%3E%3Cp%3EPosition%20a%20rack%20in%20the%20lower%20third%20of%20the%20oven.%20Preheat%20to%20325%20F.%20Thoroughly%20grease%20a%20simple%20nonstick%20bundt%20pan%20(see%20comments%20above)%20and%20have%20some%20mini%20loaf%20pans%20ready%20for%20the%20excess%20batter.%3C/p%3E%3Cp%3EPlace%20the%20flour,%20sugar%20and%20cocoa%20in%20the%20bottom%20of%20a%20mixer%20bowl.%20Whisk%20them%20together.%3C/p%3E%3Cp%3EGradually%20add%20the%20butter%20and%20shortening,%20by%20the%20tablespoon,%20to%20the%20flour%20mixture.%20When%20it%20will%20not%20make%20a%20mess,%20increase%20the%20speed%20to%20medium.%20Add%20the%20milk%20and%20mix%20on%20medium%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20baking%20powder%20and%20salt%20and%20beat%20until%20incorporated.%3C/p%3E%3Cp%3EStill%20on%20medium%20speed,%20scrape%20the%20sides%20of%20the%20bowl%20down%20as%20needed%20and%20add%20the%20eggs%20one%20at%20a%20time,%20beating%20after%20each%20addition.%20Mix%20until%20all%20ingredients%20are%20incorporated%20evenly.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20bundt%20pan%E2%80%93make%20sure%20to%20only%20use%20the%20amount%20your%20pan%20calls%20for%20(probably%2012%20cups%20if%20it%20is%20the%20classic%20bundt%20pan).%20After%20that,%20grease%20and%20fill%20mini%20loaf%20pans%20with%20the%20remaining%20batter.%3C/p%3E%3Cp%3EThe%20original%20instructions%20are%20to%20bake%20for%201%201/2%20hours,%20but%20the%20bundt%20pan%20is%20smaller.%20Start%20checking%20the%20mini%20loaf%20pans%20at%2020%20minutes%20and%20the%20bundt%20pan%20at%2050%20minutes%20(I%20am%20being%20conservative%20to%20be%20on%20the%20safe%20side%E2%80%93they%20may%20take%20longer).%20The%20cakes%20are%20done%20when%20cake%20testers%20inserted%20into%20their%20centers%20come%20out%20clean%20or%20with%20just%20a%20few%20crumbs%20attached.%3C/p%3E%3Cp%3ECool%20the%20cakes%20in%20their%20pans%20for%2010%20minutes,%20and%20then%20turn%20the%20cakes%20out%20onto%20a%20cooling%20rack.%20Cool%20completely%20before%20serving.%20Whipped%20cream%20partners%20with%20this%20cake%20beautifully.%3C/p%3E){kind=link}
