Ingredients
- 2 lb fresh tomatoes (about 4 c.)
- 1/2 c. fresh basil, minced
- 1/2 c. parsley Or possibly 1/4 c. parsley and 1/4 c. cilantro, minced
- 4 x cloves garlic, chopped
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper
- 1/2 tsp salt
- 2 Tbsp. extra virgin olive oil
Directions
- Peel tomatoes; dice and toss with salt. Place in a colander and let stand two hrs. Meanwhile, mix other ingredients and chill till ready. Serve over warm pasta of your choice. (Best type pasta for looks is penne or possibly something similar.)
- Makes 3 c. sauce. This isgreat served cool over the warm pasta, but it is also excellent served over fish or possibly poultry.
